Sauted Cauliflower with Peas.

Cauliflower seems to be all the rage now,it seems to take the place of rice,potatoes and flour in the form of pizza,gnocchi,rice, steak, soup and so much more!But how much do we know about this bouqet like vegetable in terms of its nutrient?

The versatile Cauliflower

Cauliflower is a cruciferous vegetable that is naturally high in fiber and B-vitamins. It provides antioxidants and phytonutrients that can protect against cancer. It also contains fiber to enhance weight loss and digestion, choline that is essential for learning and memory, and many other important nutrients.

Growing up, my Mother made cauliflower in a couple of ways…crispy fried or a Cauliflower masala ..a spiced preparation …yumm!!

This is my own version of my favorite recipe, making it a little more healthy with other veggies (it does have potatoes though, but not much ..haha)

ingredients

Cauliflower:1, chopped to small pieces

Potatoes:1-2 med size chopped

Oil: 2 tbsp

Peas:1/4 cup

Onion:1 chopped

Tomato: 1 chopped

Ginger paste:1 tsp

Garlic paste:1 tsp

Curry powder:2 tsp

Chillie powder:1 tsp

Turemeric powder:1/2 tsp

Salt to taste

Coriander leaves: A few to garnish

Method

Heat oil in a pan. Saute onions until translusent,and then add the tomatoes. Saute until slightly cooked. Add the spices and ginger garlic paste. Add potatoes and cook for 5 minutes . Then add the cauliflower, 1cup water and let it cook for couple of minutes. When almost done, add the peas and salt in the pan and mix it. Peas cook very fast so after a minute or so turn off the stove and cover the pan.

Add a few coriander leaves for garnish, before serving.

Goes well with Rice, Naan or Bread.

Note:You can adjust the spices depending on how spicy or bland you want it to be.
